Blueberry Delight
Blueberry Filling:
• 4 c blueberries – fresh or frozen
• 3/4 c sugar
• 3 T cornstarch
• 1 t. cinnamon
• 1/2 t. lemon juice
Crust:
• 1/2 cup butter or margarine – softened
• 2 T sugar
• 2 c graham wafer crumbs
Cream Centre:
• 8 oz. pkg. cream cheese – softened
• 1/2 c sugar
• 2 eggs
• 1/2 t. vanilla
Blueberry filling – bring blueberries and sugar to boil over med heat. Add 2-3 T of water to cornstarch, mix well and add to boiling berries. Add cinnamon and lemon juice. Remove from heat to cool.
Crust – mix graham crumbs, butter & sugar – press in 9 x 13 cake pan. Cream Centre – mix cream cheese and sugar, beat well and add eggs, vanilla and beat till smooth. Pour over crumbs and bake at 350 for 30 minutes. Let cool. Spread blueberry filling. Cover with Cool Whip or when serving. Cover pan and store in refrigerator.
